Honey and Cinnamon Roasted Carrots

Ingredients 

  • 1 lb (450g) fresh baby carrots, cleaned and trimmed

  • 2 tablespoons olive oil

  • 2 tablespoons Manuka Honey (UMF 10+ or higher for extra potency)

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon sea salt

  • A pinch of freshly ground black pepper

  • Fresh parsley or cilantro for garnish (optional)

Mānuka Honey-Cinnamon Glaze

Prepare the delectable honey-cinnamon glaze by mixing the following ingredients in a small bowl:

  • 2 tablespoons Mānuka Honey

  • 1/2 teaspoon ground cinnamon

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

  2. In a large mixing bowl, toss the cleaned baby carrots with olive oil, ground cinnamon, sea salt, and black pepper. Ensure the carrots are evenly coated with the seasoning.

  3. Drizzle the Mānuka Honey-Cinnamon Glaze over the carrots and gently toss again to incorporate the sweetness and warmth into every bite.

  4. Arrange the honey-glazed carrots in a single layer on the prepared baking sheet, making sure they have enough space to roast evenly.

  5. Roast the carrots in the preheated oven for approximately 20-25 minutes or until they become tender and slightly caramelised. The Manuka Honey will impart a beautiful golden hue to the roasted carrots.

  6. Once they are done, transfer the carrots to a serving platter, and if desired, garnish with fresh parsley or cilantro for an extra burst of flavor and colour.
