Manuka Honey & Blue Cheese Savoury Scones with Walnuts
Rich, crumbly, and complex - these scones pair bold blue cheese with earthy walnuts and the subtle sweetness of New Zealand Mānuka honey. Makes a stunning brunch or gourmet picnic item.
Ingredients (makes 8 small scones):

2 cups all-purpose flour

2 ½ tsp baking powder

½ tsp sea salt

50g cold unsalted butter, cubed

½ cup crumbled blue cheese (gorgonzola or roquefort)

½ cup chopped toasted walnuts

¾ cup milk (or buttermilk)

1 ½ tbsp Mānuka honey (plus extra for drizzling)
Instructions:

Preheat Oven:

Preheat to 200°C (390°F). Line a baking tray with parchment paper.

Mix Dry Ingredients:

In a bowl, combine flour, baking powder, and salt.

Cut in Butter:

Add cold butter cubes and rub in with fingers or use a pastry cutter until the mixture resembles coarse crumbs.

Add Fillings:

Fold in crumbled blue cheese and chopped walnuts.

Mix Wet Ingredients:

In a small bowl, whisk together milk and Manuka honey until well combined.

Combine & Shape:

Gently mix wet into dry just until a dough forms (don’t overmix).

Turn out onto a floured surface, pat into a 2–3 cm thick circle, and cut into triangles or rounds.

Place on baking tray and bake for 15–18 minutes, or until golden and firm.

While still warm, drizzle a touch more Manuka honey over the top for contrast.
