Manuka Honey Ginger-Turmeric Elixir Jellies

Ingredients (Makes ~15 small cubes):

1½ cups filtered water

2 tbsp fresh ginger, sliced or grated

1 tsp ground turmeric (or 1 tbsp fresh turmeric root)

Juice of 1 lemon

2–3 tbsp Manuka honey (UMF 15+), added after cooling

3 tbsp grass-fed gelatin powder (not agar)

Optional: a pinch of black pepper (enhances turmeric absorption)
Instructions:

In a small pot, bring water, ginger, and turmeric to a simmer. Simmer gently for 10–15 minutes.

Remove from heat. Let cool to below 40°C (warm but not hot to the touch).

Strain the liquid into a bowl, stir in lemon juice and Manuka honey.

Gradually whisk in the gelatin powder until fully dissolved and smooth.

Pour mixture into a silicone mold or shallow dish. Refrigerate for 2–3 hours until fully set.

Cut into small cubes and store in an airtight container in the fridge (lasts ~1 week).
How to use:

Eat 1–2 cubes per day in the morning or afternoon
