Spinach & Avocado Salad
This salad is packed with healthy fats, vibrant veggies, and the natural sweetness of Mānuka honey - perfect for a nourishing meal!
Ingredients:
For the Salad:

4 cups fresh spinach leaves

1 ripe avocado, sliced

1/2 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted

Optional: sliced cucumbers, radishes, or any of your favourite salad veggies
For the Manuka Honey Vinaigrette:

2 tablespoons Mānuka honey

1 tablespoon Dijon mustard

2 tablespoons apple cider vinegar

1/4 cup extra virgin olive oil

Salt and pepper to taste
Instructions:

Prepare the Salad:

In a large salad bowl, combine the fresh spinach leaves, sliced avocado, cherry tomatoes, red onion, feta cheese, and toasted walnuts.

Toss gently to mix the ingredients evenly.

Make the Manuka Honey Vinaigrette:

In a small bowl or jar, whisk together the Mānuka honey, Dijon mustard, and apple cider vinegar until smooth.

Gradually add the olive oil while continuing to whisk, until the vinaigrette is well-emulsified.
